At Hereford Candlemas fair, on Tueſday laſt, the cattle exhibited'an ex-- celleont how of animals, although the number of beaſts was ſmaller than is generally witneſſed at this fair.--Cattle of every deſcription ſold well, as the buyers were numerous.--Several fine horſes were brought for ſale in the horſe fair, which went at very high prices, and animals of an inferior,des Cription alfo ſold dear. Letbury Fair, on Monday, exhibited but a(mall how of cattle, which ſold quickly at good prices. Horſes all went high. Pigs were on the ad- vance. Cheeſe, two meals, averaged from 545. to 565. per cwt. 3 ofthe beſt making none were offered for ſale,

* Parpoutier; a celebrated French chemiſt, has diſcovered a new ſpecies of utility, beſides its nutritive powers, in the potatoe, and his diſcovery has been proved in England by(tucco plaſterers. From the ſtarch of potatoes, quite freſh, and waſhed but once, a fine ſize, by mixture with chalk, has been made, and in a'variety of inſtances ſucceſsfully uſed, particularly for geilings. This ſpeeies of ſize has no ſmell; with animal ſze, putrifying 20 readily, uniformly exhales a moſt diſagreeable and unwholſome odour; the ſize et potatoes being very little Subje&t to putreſattion, appears from ex- perience to prove more durable in tenacity and whiteneſs, and, for white waſhing, ſhould always-be- preferred to animal ſize, the decompoſition of which, always exhibits proofs of infe&tious eMuvia. 33

The reſult of a courſe of-experiments was laid before the Hereford Agri- Cultural Society, on Monday, by T. A. Knight, Eſq. by which it appeared, that the ſtrength. of the juice of any-cider apple. was'in exatt proportion'to its weight. Thus the Jjuices of the inferior apples were light when com- pared'with the juices of the old ant approved ſorts. The Foreſt Stire out- weighed every other, until it was put in competition with the new variety produced by Mr. Knight, from the Siberian Crab and the Lulham Pear= main; nor could any other juice be found equal in weight to the latter.

In the year 1896, there were grown on moſs land, at Caſtle Head,-never before cultivated, carrots, which in one ſquare yard(tried in ſeveral parts of the field) weighed 471b. Half an acre produced, on the average, 9 tons, 4 ewt. 2 grs: 161b. catrrots, which; at 4s. per cwt.' would anvunt to 361. 285. 6d. The'quantity' of potatoes growing on four ſtatute acres of the ſame field was 690 buſhels. The rows were tour feet aſunder.

Subſtitute för barm,. which may prove generally uſeful;-+Tö a pint of frelh beer, ur porter, put a table ſpoonful of brown[ugar, and as much flour as will convert it ts the confiſtence of a batter; put the mixture into a ſmall jar or bottle, corking it cloſe, as it is apt to fly. Shake it well twice aday, for ſix days,.it will then be fit for ule. The above will work 14 pounds of* Bours- leave-about a tea cup full in the bottle, and add the ſame quantity of bear, lugar and flour, it will be fit tor uſe in three days, Leave the barm to ſpunge with the-four.ſome time in the.day, make the bread at night, and bake it early next morning. The barm is to be beaten up with a little warm water, to ſponge in the flour as ſvon as it is vut of the Jar, and left for about ſix hours betore the bread is made. 4
